Hailing from the hills of Piacenza, the ancestral method involves re-fermentation in the bottle without disgorging, so there remains yeast in the bottle that gives the product a more intense flavor.

The malvasia makes a 5-day maceration on the skins, so the color is golden, the taste is candied fruit, citrus, yellow-fleshed fruit and herbs, fresh on the palate, excellent for an aperitif with cheese and cured meats.
